(Put stuff in ~/.config/gtk-3.0/settings.ini, like this:

[Settings]
gtk-theme-name = MediterraneanDarkest
gtk-fallback-icon-theme = gnome
gtk-application-prefer-dark-theme = true
gtk-font-name = DejaVu Sans Semi-Condensed 10
)

Only took 1½ hours. Aaargh.

Update: To configure GTK2, the package gtk-theme-switch is useful.
